Lo Stato da mar nello sguardo genovese (secoli XVI-XVII) / The Venetian Stato da mar in the Genoese Gaze (16th-17th centuries)

La lacuna storiografica che concerne lo sguardo di Genova su Venezia (G. Assereto) risulta ancor più vistosa in relazione allo stato da mar, sul quale il ceto di governo genovese non mancò d’altra parte d’interrogarsi, e specie nel corso del Seicento. Con la conquista ottomana di Chio (1566), il sistema degli stabilimenti genovesi nel Mar Nero venne definitivamente meno. Il successivo progetto di riarmo, mirante anche al ripristino dei canali commerciali col Levante, imponeva la ridefinizione dei rapporti (anzitutto politico-diplomatici) con Venezia e i suoi domini mediterranei. Il mancato intervento genovese in soccorso di Creta (guerra di Candia, 1645-69) è in questo senso emblema di un fallimento. Tutt’altro scenario disvela la galassia dei percorsi sociali, economici e politici frattanto tracciati dai numerosi genovesi che nacquero, vissero e prosperarono nello stato da mar, che in taluni casi contribuirono ad amministrarlo e difenderlo (è il caso dei Giustiniani di Pantaleo, fuggiti da Chio e radicatisi in Morea).

Venice was a role model for the Republic of Genoa, especially during the early modern period. However, there is a significant historiographical gap concerning the Genoese gaze upon Venice and the Venetian stato da Mar. With the Fall of Chios (1566), Genoa lost its last possession in the Black Sea and tried in vain to re-establish commercial ties with the Levant. The Venetian support therefore became a priority and the Genoa’s failure to participate in the War of Candia (1645-69) was a political mistake. The history of many Genoese families who lived in the Venetian Oltremare and contributed to its prosperity (as the Giustiniani branch of Morea) reveals a very different scenario: it is history of a solid and effective partnership.

La garanzia del buon funzionamento delle forze del mercato, insieme alla cura della salute pubblica, l’informazione, il controllo della mobilità delle persone e la valorizzazione del traffico di merci, sono tra i requisiti cui la Serenissima Repubblica di Venezia presta particolare attenzione nei suoi possedimenti e suprattutto nello Stato da mar.
Già dal 1501, le navi con capacità superiore alle 200 botti, in viaggio verso Venezia, erano tenute a sostare a Corfù oppure a Zante per l’indispensabile controllo sanitario e doganale. A questo scopo, lo Stato Veneziano riconosce al Borgo della Marina di Zante il suo Uffizio di Sanità, il Lazzaretto esistente al Capo di Rostopoulos, ed anche l’isolotto Marathonissi (per coloro che erano gravemente malati di peste) inserendoli nella sua rete di politica sanitaria, commerciale e fiscale. L’Uffizio di Sanità è un servizio fornito dal Consiglio della Comunità dell’isola. Sia i tre cittadini a capo, come anche il personale dipendente, per l’amministrazione e la gestione, sono eletti dallo stesso Consiglio, e poi approvati e controllati dal provveditore veneziano dell’isola per espletare le competenze relative a queste questioni, che saranno approfondite nella presente relazione. Nel Lazzaretto, in seguito alle ristrutturazioni e miglioramenti apportati negli anni 1588-1590, un cittadin originario veneziano è nominato prior, eletto dal Consiglio del Collegio e soggetto al provveditore veneziano dell’isola. Il provveditore ed il Consiglio della Comunità provvede alla nomina del restante personale amministrativo e gestionale del Lazzaretto, mentre le sue spese di funzionamento sono coperte dai servizi offerti.

Securing the correct functioning of the market, together with public health, information, monitoring the mobility of people, enhancing the transport of goods:  these were the elements the Most Serene Republic of Venice was particularly focused on in its domains, mainly in the Stato da Mar. By 1501 ships heading to Venice, with a capacity higher than 200 botti, had to stop in Corfu or Zante for the necessary sanitary and customs inspection. Therefore, The Venetian State included The Uffizio di Sanità in Borgo della Marina of Zante, the quarantine house (Lazaretto) in the Cape of Rostopoulos, and also the island of Marathonissi (for the plague-stricken), in its network of health, commercial and fiscal policy. The Uffizio di Sanità was a service offered by the Community Council of the island. Both the three citizens in charge and the administration and management personnel were elected by the Council itself, and later approved and controlled by the Venetian Provveditore of the island, in order to carry on their duties regarding the issues we will survey in this paper. In the Lazaretto, after the renovations and the improvements of the years 1588˗1590, the College Council nominated a native Venetian citadin as prior, who was under the Venetian Provveditore of the island. Both the Provveditore and the Community Council were in charge of the designation of the remaining administrative and management personnel of the Lazaretto, whereas its working expenses were covered by the services offered there.

Η εγγύηση της καλής λειτουργίας των δυνάμεων της αγοράς σε συνδιασμό με την πρόβλεψη για την δημόσια υγιεία, η πληροφόρηση, ο έλεγχος της κινητικότητας των ανθρώπων και η αξιοποίηση της διακίνησης των εμπορευμάτων, είναι μεταξύ των απαιτήσεων που η Βενετική Πολιτεία φροντίζει να ικανοποιεί στις κτήσεις της και δη τις θαλάσσιες.
΄Ηδη το έτος 1501, τα πλοία χωρητικότητας άνω των 200 botte, πλέοντα προς Βενετία, οφείλουν να ναυλοχήσουν στην Κέρκυρα ή στην Ζάκυνθο για τον απαραίτητο υγιειονομικό και τελωνειακό έλεγχο. Ως εκ τούτου, η Βενετική Πολιτεία αναγνωρίζει στην πόλη του Αιγειαλού της Ζακύνθου το Γραφείο επί της Υγιείας, Uffizio di Sanità, το υπάρχον στο Ακρωτήρι του Ροστόπουλου Λοιμοκαθαρτήριο, Lazzaretto, καθώς και αυτό στην νησίδα Μαραθωνήσι (για τους βαρειά ασθενούντες πανωλοβλήτους) και τα εντάσσει στο δίκτυο της υγιειονομικής, εμπορικής και δημοσιονομικής πολιτικής της. Το Γραφείο επί της Υγιείας, αποτελεί προσφερόμενη από το Συμβούλιο της Κοινότητας υπηρεσία. Τόσο οι τρεις επικεφαλής cittadini όσο και το υπαλληλικό προσωπικό, διοικητικό και διαχειριστικό, εκλέγονται από το Συμβούλιο της Κοινότητας, εγκρίνονται και ελέγχονται από τον βενετό προνοητή της νήσου και ικανοποιούν τις σχετικές με το αντικείμενο αρμοδιότητες, οι οποίες και αναπτύσσονται στην παρούσα ανακοίνωση. Στο Λοιμοκαθαρτήριο, μετά τις ανακαινίσεις και βελτιώσεις των ετών 1588-1590, ορίζεται prior βενετός cittadin originario, εκλεγόμενος από το Συμβούλιο του Κολλεγίου και υπαγόμενος στον βενετό προνοητή της νήσου. Ο προνοητής και το Συμβούλιο της Κοινότητας ορίζουν το λοιπό διοικητικό και διαχειριστικό προσωπικό του Λοιμοκαθαρτηρίου. Τα έξοδα λειτουργίας του καλύπτονται από τις προσφερόμενες υπηρεσίες.

L’Archivio regionale di Capodistria / The Regional Archives of Koper / Pokrajinski arhiv v Kopru

L’archivio regionale di Capodistria – istituito nel 1956, mentre l’unità separata di Pirano risale al 1955 – si occupa della conservazione del materiale archivistico pertinente all’area di Ancarano / Ankaran, Divaccia / Divača, Erpelle-Cosina / Hrpelje-Kozina, Villa del Nevoso / Ilirska Bistrica, Isola d’Istria / Izola, Comeno / Komen, Capodistria / Koper, Pirano / Piran, Pivka, Postumia / Postojna e Sesana / Sežana.
Gli inizi dell’attività archivistica nel Litorale sono collegati alle biblioteche. A Pirano l’archivista comunale è impiegato a partire dal 1877, mentre nel 1891 l’archivio viene annesso alla Biblioteca civica. A Capodistria la biblioteca inizia a prendere in consegna il materiale d’archivio nel 1900. Il primo ottobre 1953, su iniziativa della Società storica di Capodistria, il Comitato popolare cittadino (CPC) di Capodistria decide di separare l’archivio dalla biblioteca civica, facendolo diventare servizio autonomo nell’ambito del CPC della città. Con l’annessione della zona B del Territorio libero di Trieste alla Jugoslavia ed in base alla legislazione jugoslava in materia archivistica, il 25 febbraio del 1956 si istituisce l’Archivio civico di Capodistria che il 2 ottobre del 1967 diventa Archivio regionale di Capodistria. Nel 1974 gli viene annesso anche l’Archivio civico di Pirano.
L’Archivio ha sede nell’ex convento di Santa Chiara, mentre l’unità dislocata di Pirano si trova in via Salvore. L’Archivio regionale di Capodistria può vantare i più antichi documenti scritti di tutta la Slovenia. Nel Fondo del Comune di Pirano i primi documenti risalgono al 1173, gli statuti al 1307, gli atti notarili al 1282, i Libri dei vicedomini al 1325, le Ducali al 1263 ed i testamenti al 1296, mentre vanno dal 1332 in poi quelli del Fondo del Comune di Capodistria (gran parte di questo fondo è stata trasferita in Italia nel 1944 e attende tutt’ora di essere restituita).

The regional archives of Koper were founded in 1956 (whereas the separated section in Piran was founded in 1955) and deal with the conservation of the archival material relating to the areas of Ankaran, Divača, Hrpelje-Kozina, Ilirska Bistrica, Izola, Komen, Koper, Piran, Pivka, Postojna and Sežana.
Archival activities in the Littoral began thanks to the libraries. In Piran Council archivists appeared in 1877, whereas the archive was annexed to the Town library in 1891. In Koper the library began to accept archival material in 1900. On October 1, 1953, thanks to the Koper Historical society, the Koper Popular town committee divided the archives from the town library, turning them into an independent service inside the popular town committee. When the Zone B of the Free territory of Trieste was annexed to Yugoslavia, the Town archives of Koper were founded on February 25, 1956, following the Yugoslav law for archives; they became Regional archives of Koper on October 2, 1967. In 1974 the Town archives of Piran were included.
The Archives are housed in the former convent of St. Clare, whereas the detached unit of Piran is in Savudrijska ulica. The Regional archives of Koper proudly host the oldest written documents of all Slovenia. In the Fond of the Council of Piran the oldest documents go back to 1177, the Statues to 1307, the notarial deeds to 1282, the Books of vicedomini to 1325, the Ducali to 1263 and the wills to 1296, whereas documents  included the Fond of the Council of Koper date from 1332 on (the biggest part of this fond was moved to Italy in 1944 and is still waiting to be brought back).

Pokrajinski arhiv v Kopru (ustanovljen leta 1956, dislocirana enota v Piranu 1955) opravlja službo varstva arhivskega gradiva na območju občin Ankaran, Divača, Hrpelje-Kozina, Ilirska Bistrica, Izola, Komen, Koper, Piran, Pivka, Postojna in Sežana.
Začetki arhivske dejavnosti v Primorju so povezani s knjižnicami. V Piranu so mestnega arhivarja namestili leta 1877, leta 1891 pa so arhiv združili z mestno knjižnico. V Kopru je knjižnica začela prevzemati arhivsko gradivo leta 1900. Na pobudo Zgodovinskega društva v Kopru je Občinski ljudski odbor (ObLO) Koper 1. oktobra 1953 ločil arhiv od mestne knjižnice. Arhiv je postal samostojna služba v okviru ObLO Koper. Po priključitvi cone B Svobodnega tržaškega ozemlja k Jugoslaviji je bil na podlagi jugoslovanske arhivske zakonodaje 25. februarja 1956 ustanovljen Mestni arhiv Koper, ki se je 2. oktobra 1967 preimenoval v Pokrajinski arhiv Koper (PAK). Leta 1974 se mu je priključil še Mestni arhiv Piran.
Arhiv ima v Kopru prostore v bivšem samostanu sv. Klare, dislocirana enota v Piranu pa na Savudrijski ulici. PAK se ponaša z najstarejšim pisnim gradivom na Slovenskem. Fond mesta Piran obsega listine od leta 1173 dalje, statute od 1307, notarske knjige od 1282, vicedominske knjige od 1325, dukale od 1263 in testamente od leta 1296 dalje. Fond mesta Koper pa obsega gradivo od leta 1332 dalje (večina fonda je bila 1944 odpeljana v Italijo in še vedno čaka na restitucijo).

L’archivio municipale, l’opera di Stefano Rota e la tutela della memoria storica piranese / The Town Archive, the Work of Stefano Rota and the Safeguard of the Piran Historical Memory / Občinski arhiv, delo Stefana Rote in ohranjanje piranskega zgodovinskega spomina

Per una serie di felici circostanze, la documentazione piranese conservata nell’edificio della podesteria veneziana non subì manomissioni del corso del tempo. La copiosa presenza di fonti risalenti al medioevo aveva interessato lo storico e archeologo triestino Pietro Kandler (1804-1872) che le esaminò e raccolse presentandole nella rivista “L’Istria” e nel Codice Diplomatico Istriano. Per quanto concerne la tutela delle patrie memorie, decisivo fu il coinvolgimento del conte Stefano Rota (1824-1916), erudito piranese dai vasti interessi, che nel 1855 era stato invitato dal podestà Pier Felice Gabrielli ad ordinare la Biblioteca civica e l’annesso archivio. Per un quarantennio questi prestò la sua opera con risultati importanti, tanto che divenne un modello da seguire. L’archivio di arricchì dei manoscritti e cimeli appartenuti a Giuseppe Tartini nonché del fondo della vicedomineria. Nel 1944, in base ad un accordo tra il podestà Giovanni Fonda e la R. Soprintendenza Bibliografica per le Venezie, la documentazione più preziosa fu sistemata sotto lo scalone del palazzo municipale, evitando abbandonasse la cittadina. A differenza dell’Archivio municipale di Capodistria, trasportato quell’anno a Venezia e per un settantennio inaccessibile agli utenti, quello piranese, con la ricca documentazione d’età veneziana, continuò ad essere consultato e studiato.

A chain of fortunate events allowed the Piran documentation kept in the building of the Venice podesteria not to be tampered with during time. The wide number of sources from the Middle Ages had attracted the Trieste historian and archaeologist Pietro Kandler (1804-1872) who studied and collected them, presenting them in the journal “L’Istria” and in the Diplomatic Code of Istria. As regards the protection of homeland memories, we must consider the important involvement of Earl Stefano Rota (1824-1916), a scholar from Piran with wide interests, who in 1855 had been invited by the podestà Pier Felice Gabrielli to arrange the Town Library and the enclosed archive. His 40-year work was so important that it became a model to follow. The archive was enriched by manuscripts and memorabilia once owned by Giuseppe Tartini, as well as by the fond from the vicedomineria. In 1944, following an agreement between the podestà Giovanni Fonda and the Royal bibliographic department, the most precious documentation was placed under the grand staircase of the town hall and remained in the town. Unlike the Town Archives of Koper, which were moved that year to Venice (and remained unavailable for 70 years), the Piran archives and their rich historical documentation from the Venetian era continued to be available and studied.

Piranska arhivska dokumentacija, shranjena v zgradbi beneškega podestata, se je nedotaknjena ohranila skozi stoletja zgolj po spletu srečnih okoliščin. Obsežni nabor virov, ki so segali vse do srednjega veka, je pritegnil pozornost tržaškega zgodovinarja in arheologa Pietra Kandlerja (1804-1872). Ta je gradiva pregledal, uredil in kasneje predstavil v reviji “L’Istria” ter v zbirki Codice Diplomatico Istriano. Pri ohranjanju zgodovinskega arhiva je ključno vlogo odigral grof Stefano Rota (1824-1916), piranski izobraženec in človek številnih interesov, ki ga je podestat Pier Felice Gabrielli leta 1855 povabil, naj uredi Občinsko knjižnico in pripadajoči arhiv. Grof jima je posvetil štiri desetletja življenja in ob tem dosegel pomembne rezultate. Njegov način dela so posnemali številni. Med grofovim vodenjem je arhiv postal bogatejši za rokopise in dragocenosti Giuseppa Tartinija ter za arhivski fond vicedominerije. Leta 1944 so na podlagi dogovora med podestatom Giovannijem Fondo in R. Soprintendenza Bibliografica per le Venezie (Kraljevim bibliografskim nadzorništvom v Benetkah) najdragocenejše arhivske vire namestili pod stopnišče občinske palače. S tem so preprečili, da bi arhiv zapustil mesto. Za razliko od koprskega Občinskega arhiva, ki so ga istega leta preselili v Benetke in je bil naslednjih sedem desetletij povsem nedosegljiv, je piranski arhiv z bogato dokumentacijo iz obdobja Beneške republike ostal ves čas dostopen za raziskovanje in preučevanje.

Corfù, 16 maggio 1673: Frango Dobriotis, il capo maistro degli allevamenti di pesce di Bastia, esalò il suo ultimo respiro nella contrada Castrades della città di Corfù. Frango aveva la febbre alta e quando le sue condizioni peggiorarono i suoi compagni di lavoro lo trasportarono illegalmente con una barca su una costa dell’isola vicina alla città per accompagnarlo in seguito alla sua dimora dove, dopo qualche ora morì. Una morte improvvisa provocava sempre il sospetto delle autorità. Inoltre, l’improvvisο decesso di un uomo giovane senza precedenti problemi di salute, appena arrivato dalle rive opposte dell’isola, proprio dal confine con l’Impero ottomano, creava certamente uno stato d’allarme. Di conseguenza l’applicazione dei protocolli sanitari, per evitare la propagazione di un’eventuale epidemia, disastrosa per la stessa isola ma anche per la Dominante e per i suoi interessi nell’area dello Ionio, doveva essere innegoziabile.  Questo spiacevole episodio fu l’inizio di una epidemia di peste, l’ultima che ha invaso l’isola, ma nello stesso tempo fu l’inizio per l’apertura di un processo dal Bailo di Corfù contro i Provveditori alla sanità dell’isola, tutti cittadini eminenti del posto. Tra le righe di questo processo si cerca di ricostruire i rapporti tra dominanti e dominati, le pratiche di governo, le dinamiche della società locale, gli equilibri politici e sociali, i poteri che si svilluppano tra lo “spazio” publico e quello privato in un periodo cruciale per la Serenissima, pochi anni dopo la perdita di Candia.

Corfu, May 16, 1673: Frango Dobriotis, the chief master of fish farming in Bastia, breathed his last in Castrades, a hamlet of Corfu. Frango had a temperature, and when his health conditions got worse, his workmates illegally carried him on a boat to the coast of the island near the town; then they brought him home where he died, a few hours later. Authorities always suspected of a sudden death. Moreover, as Frango was a young, healthy man with no previous health problems, just arrived from the opposite water bank of the island, right near the border with the Ottoman empire, his sudden death was a definite source of alarm. It was compulsory to apply health protocols in order to avoid an epidemic to spread, something awful not only for the island itself but also for the Dominante and its interests in the Ionian area. Such distressing event was the start of the last plague that invaded the island, but at the same time it was the start of a trial brought by the Bailo in Corfu against the Public Health Office (Provveditori alla Sanità), consisting of local, prominent, citizens. Reading between the lines of this trial we try to reconstruct the relationship between dominants and dominated, the government practices, the dynamics of the local society, the political and social balances, the powers growing between the public and the private spaces in a crucial period for the Serenissima, a few years after the loss of Candia.

Κέρκυρα 16 Μαΐου 1673: στην κοντράδα Καστράδες της πόλης της Κέρκυρας άφηνε την τελευταία του πνοή ο Frango Δοβριώτης, αρχιεργάτης στα ιχθυτροφεία της Μπάστιας. Ο Frango είχε παρουσιάσει υψηλό πυρετό και καθώς η κατάστασή του χειροτέρευε, οι σύντροφοί του τον μετέφεραν παράνομα στις ακτές του νησιού με μία βάρκα, για να το συνοδεύσουν αμέσως μετά στην οικία του. Ένας ξαφνικός θάνατος προκαλούσε πάντοτε υποψίες στις αρχές. Ο ξαφνικός θάνατος, όμως, ενός υγιούς νεαρού άνδρα που μόλις είχε φτάσει από τις αντικρινές ακτές της Κέρκυρας, οι οποίες αν και βενετικό έδαφος συνόρευαν με την Οθωμανική Αυτοκρατορία, νοηματοδοτούνταν μόνο με όρους έκτακτης κατάστασης και η εφαρμογή των υγειονομικών πρωτοκόλλων ήταν αδιαπραγμάτευση, προκειμένου να αποσωβηθεί ο κίνδυνος εκδήλωσης και πολύ περισσότερο εξάπλωσης μιας επιδημίας στο νησί, επιζήμιας τόσο για το νησί, όσο φυσικά και για τη Βενετία. Το ατυχές αυτό επεισόδιο υπήρξε η αρχή μιας επιδημίας, της τελευταίας που έπληξε το νησί μέχρι το τέλος της βενετικής Πολιτείας, όπως επίσης η αφορμή για σχηματιστεί από το Βάιλο δικογραφία κατά των τοπικών υγειονόμων, διακεκριμένων cittadini της Κέρκυρας. Μέσα από τα δικόγραφα επιχειρείται η ανίχνευση των σχέσεων μεταξύ κυριάρχων και κυριαρχούμενων, οι πρακτικές διακυβέρνησης, οι δυναμικές της τοπικής κοινωνίας, η προσπάθεια διατήρησης των πολιτικών και κοινωνικών ισορροπιών, οι εξουσίες που διαμορφώνονταν μεταξύ του δημόσιου και του ιδιωτικού «χώρου» σε μια κρίσιμη περιόδο για τη Βενετία, μόλις λίγα χρόνια μετά την απώλεια της Κρήτης.

L’Archivio dell’Istituto Ellenico di Studi Bizantini e Post-Bizantini è un ente creato nella seconda metà del XX secolo a Venezia, per conservare una serie di fondi archivistici prodotti dall’attività dei Greci sudditi della Serenissima che vivevano nella capitale e nello Stato da mar. Ѐ di piccole dimensioni ma svolge un ruolo importante per la ricerca storica che abbraccia almeno quattro secoli.
Questa presentazione si basa sulle sue serie archivistiche principali, alla ricerca delle tracce di persone, di gruppi sociali e della loro mentalità, delle istituzioni e delle realtà che finiscono ad unire il mondo europeo pre-moderno con quello dell’Oriente greco. L’Archivio dell’Istituto Ellenico integra i documenti conservati negli archivi locali dei territori occupati dai Veneziani, in sintonia con il grande “archivio-matrice”, cioè l’Archivio di Stato di Venezia. La sua apertura a una epoca nuova non solo renderà il suo contenuto accessibile alla più ampia comunità scientifica, ma in particolare rafforzerà la sua posizione come un polo archivistico-culturale in un mondo multipolare di ricerca storica che si occupa delle ampie rappresentazioni delle realtà in un spazio greco-veneziano unico: in altre parole, dell’Europa.

The Archives of the Hellenic Institute for Byzantine and Post-Byzantine Studies were founded in the second half of the 20th century in Venice, in order to preserve a series of archival fonds produced by the Greek subjects of the Serenissima who were living in the capital and in the Stato da Mar. They are small but very important for a four-century wide historical research. This paper is based on the archives main series, and on the research for the traces left by people, social groups and their culture, institutions and facts connecting pre-modern European world and Greek Eastern world. The Archives of the Hellenic Institute add to the documents housed in the local archives of the territories ruled by Venetians, in agreement with the great “model archives”, i.e. the State Archives in Venice. Not only will their future opening make their documents available to the widest scientific community, but in particular this will strengthen their position as an archival-cultural centre, in a multipolar research world dealing with the multifarious aspects of facts in a unique Greek-Venetian space: in other words, the European space.

Το Αρχείο του Ελληνικού Ινστιτούτου Βυζαντινών και Μεταβυζαντινών Σπουδών, ενός φορέα που δημιουργήθηκε στο β΄ μισό του 20ού αιώνα στη Βενετία προκειμένου να διαφυλάξει ένα σύνολο τεκμηρίων που παράχθηκαν από τη δραστηριότητα των ελλήνων υπηκόων της Γαληνοτάτης που διέμεναν στη μητρόπολη και στο Κράτος της Θάλασσας, έχει μικρή έκταση αλλά μεγάλη χρησιμότητα στην ιστορική έρευνα. Αγκαλιάζει τουλάχιστον τέσσερις αιώνες ιστορίας. Η παρουσίαση αυτή στηρίζεται στις κυριότερες αρχειακές σειρές του, αναζητώντας τα ίχνη προσώπων, κοινωνικών ομάδων και νοοτροπιών, θεσμών αλλά και πραγματικοτήτων που έρχονται να ενώσουν τον πρώιμο νεότερο ευρωπαϊκό κόσμο με εκείνον της ελληνικής Ανατολής. Το Αρχείο του Ελληνικού Ινστιτούτου συμπληρώνει τα τεκμήρια που φυλάσσονται στα τοπικά αρχεία των βενετοκρατούμενων ελληνικών περιοχών, καθώς αυτά συναρθρώνονται με τη μεγάλη αρχειακή «μήτρα», που είναι το Archivio di Stato di Venezia. Το άνοιγμά του στη σύγχρονη εποχή όχι μόνο θα καταστήσει το περιεχόμενό του προσβάσιμο στην ευρύτερη επιστημονική κοινότητα αλλά κυρίως θα ενδυναμώσει το στίγμα του ως αρχειακού πόλου σε έναν πολύ-πολικό κόσμο ιστορικής έρευνας, ο οποίος έχει ως αντικείμενο την αναπαράσταση των πραγματικοτήτων του ενιαίου ελληνοβενετικού χώρου· με άλλα λόγια, του ευρωπαϊκού χώρου.

Il contributo intende mettere in luce gli elementi pertinenti al discorso del cibo e dell’ambiente sull’isola di Cherso, come illustrati nell’opera di Alberto Fortis (1741-1803), in particolare nel Saggio d’osservazioni sopra l’isola di Cherso ed Osero (Venezia 1771).
L’interesse etnografico che il Fortis dimostra verso la costa adriatica orientale, espresso con maggiore intensità nel Viaggio in Dalmazia (Venezia 1774), consente di valutare la continuità e lo stato di conservazione della cultura alimentare nel contesto dell’ambiente antropico sull’isola di Cherso, dove l’autore sta compiendo delle indagini sul campo.

The paper aims to highlight the relevant elements of discourse about food and environment on the island of Cres as illustrated in the work of Alberto Fortis (1741-1803), in particular in the Saggio d’osservazioni sopra l’isola di Cherso ed Osero (Essay of Observations on the Island of Cres and Osero) (Venice 1771). The ethnographic interest that Fortis shows towards the eastern Adriatic coast, expressed with greater intensity in his Viaggio in Dalmazia (Journey to Dalmatia) (Venice 1774), allows an evaluation of the continuity and the state of preservation of the food culture and environment on the island of Cres, where the author of this contribution is carrying out some field investigations.

Insieme a tutte le sue bellezze naturali, Curzola è definita anche dalla ricca eredità culturale ed etnologica, nonché dalla sua gastronomia che tra gli esperti e i buongustai ha preso una posizione di preminenza. Anche se la gastronomia di Curzola può vantare oggi cuochi eccellenti, in isola la cucina più presente ma anche la preferita è quella tradizionale. L’olio di oliva, la carne di capretto, una vastità di tipologie di pesce e il vino rinomato sono stati da sempre presenti nell’isola grazie alla sua posizione, al clima e alla terra adatta alla coltivazione. Così su ogni tavola festiva si può trovare qualcosa delle ricette tradizionali, che uniscono le ricchezze già citate: i pesci in saor, il brodeto, la carne sotto la “peka”, i vari tipi di pasta come i “makaruni” di Zernovo, che nella versione contemporanea si preparano anche con il pesto genovese o i frutti di mare.
E invece, riguardo ai dolci? Rivestono anche loro un ruolo importante nella tavola curzolana o sono diventati un eccesso superfluo dopo un pasto abbondante? Esistono i dolci tipici per le occasioni speciali? Per rispondere alle domande poste, faremo una passeggiata per le cucine dell’isola e scopriremo se le ricette tradizionali sono cambiate negli anni, o sono rimaste fedeli ai vecchi archivi. In particolare, faremo un accenno ai dolci tradizionali delle solennità esplorando i ricettari delle cuoche, giovani o anziane.

Not only is Korčula defined by its natural beauties, it is also defined by its rich cultural and ethnological identity, as well as its cuisine (which experts and gourmands hold in high esteem). Although today many an excellent chef work in the island of Korčula and bring changes in traditional recipes, traditional cuisine is still the most popular and the most beloved. Olive oil, goat meat, many types of fish and the famous wine have always been present in the island thanks to its position, its weather and its soil, perfect for farming. Festive food includes something traditional: pesce in saor, brodeto, carne sotto la “peka”, different types of pasta, e.g. “makaruni” of Zernovo, whose modern version also includes Genoese pesto or seafood.
What about dessert? Are they also important on the island tables or are they redundant after a rich meal? Are there typical desserts for special occasions?
In order to give an answer to these questions, we will take a tour through the kitchens of the island and will discover whether traditional recipes have changed through the years or have remained as old archives indicate. In particular, we will talk about the traditional festive desserts while exploring the cookbooks of old and young cooks.

Korčulu uz sve prirodne ljepote određuje i njeno bogato kulturno i etnološko naslijeđe, ali i njezina gastronomija, koja je zauzela vodeće mjesto, kako među znalcima tako i među gurmanima. Iako se gastronomija Korčule može pohvaliti vrhunskim kuharima koji rade na otoku te su donijeli razne novitete koji su brzo prihvaćeni, na Korčuli je ipak tradicionalna kuhinja najzastupljenija, ali i najomiljenija. Maslinovo ulje, kozletina, razna riba i vrhunsko vino prisutni su na otoku oduvijek zbog njegovog položaja, klime i zemlje pogodne za uzgoj te se na svakom blagdanskom stolu može naći ponešto od recepata iz davnina koji objedinjuju ta bogatstva: pesce in saor, il broeto, carne sotto la peka, ali i razne tjestenine kao na primjer Žrnovski makaruni, koji se u modernoj verziji pripremaju i s pestom ili morskim plodovima. No, što je sa slasticama? Imaju li one posebno mjesto za korčulanskom trpezom ili su postale nepotrebni višak nakon obilnog objeda? Postoje li posebne slastice za posebne prilike? Poslužuju li se i danas tradicionalni kolači ili su popularnije neke moderne verzije? Kako bismo dobili odgovor na ta pitanja prošetat ćemo otočkim kuhinjama i saznati jesu li se i među tim receptima dogodile promjene ili su vjerni starim zapisima pri čemu ćemo posebnu pažnju posvetiti blagdanskim kolačima i slasticama za svetkovine istražujući kuharice starih i mladih korčulanskih kuharica.

La Dalmazia e il sale: tipologie di produzione e consumi tra il 1555 e la guerra di Candia / Dalmatia and Salt: Types of Production and Consumption Between Mid˗16th Century and the War of Candia

J.C. Hocquet ha indagato i legami tra la Repubblica e il sale, ma le sue ricerche si concludono ai primi decenni del Cinquecento quando il sale cessa di essere uno strumento di sostegno per le rotte marittime della Serenissima oramai in contrazione. Per il periodo successivo mancano studi salvo un contributo di Marco Brazzale, nonostante i dazi sul sale rimangano la principale entrata dello stato e al sale si colleghino vicende legate sia alla storia di altri alimenti come salumi e pesce, sia all’allevamento sia al contrabbando. In Dalmazia il sale è anche strumento di controllo politico per avvicinare le popolazioni seminomadi dell’entroterra balcanico, insofferenti suddite dell’impero ottomano.
Si illustrano i centri di produzione in Dalmazia, se ne ricostruisce l’andamento produttivo e i consumi delle città, nelle quali circolava di più sale istriano che dalmata, a causa di motivazioni più politiche che economiche, che si spiegano. Il sale che giungeva in Dalmazia era fondamentale per conservare il pescato. Si discute il suo ruolo per le isole di Lissa, Lesina, Brazza e Curzola. Si analizza il sale nella dialettica tra Venezia e i Morlacchi, dal punto di vista politico ed economico. L’economia morlacca si fondava sull’allevamento e il sale era fondamentale in tutte le sue fasi, costringendo i Morlacchi a recarsi nelle coste. Venezia era combattuta: nell’immediato ottenere il massimo del profitto dalla vendita del sale, nel lungo periodo evitare l’aumento dei prezzi per evitare il contrabbando e il dirottamento dei Morlacchi su altre scale.
Fonti: ASVE, Provveditori al Sal, ma anche Senato, Dispacci, Rettori, Dalmazia, che non è quasi mai stato considerato per questo tipo di ricerche pur dando informazioni preziose.

J.C. Hocquet has investigated links between Republic of Venice and salt, but his research ends in the early decades of the sixteenth century when salt ceased to be a support tool for the maritime routes of the Serenissima, which were contracting. For the next period there are no studies except for a contribution by Marco Brazzale, although the duties on the salt remained the main entrance to the state. This lack of interest should be filled because even in these centuries, salt was linked to the history of other foods such as meat and fish, and, moreover, breeding and smuggling were connected to it. In Dalmatia, salt was also an instrument of political control to bring closer semi-nomadic populations of the Balkan hinterland, intolerant subjects of the Ottoman Empire. In this contribution, the production centers in Dalmatia will be illustrated, as like as the productive trend and the consumption of the cities, that will be reconstructed. Moreover, it will be underlined that in Dalmatia more Istrian salt circulated than Dalmatian one, due to more political than economic reasons, which will be explained. Salt that arrived in Dalmatia was essential to preserve fishes already caught and, for this reason, its role for the islands of Lissa, Hvar, Brac and Korcula will be focused and discussed. In the end, salt will be analyzed in the dialectic between Venice and Morlachs, from the political and economic point of view. Morlachs’ economy was based on breeding and salt was fundamental in all its phases, forcing Morlachs to go to the coasts. Venice was fought between to opposite ideas: immediately to obtain the maximum profit from the sale of salt to foreigners, but in the long period increase of salt price was a problem because it helped smuggling and the diversion of Morlachs to other scales.

In dispensa e a tavola. Un approccio gastronomico alla storia della Cefalonia veneziana / In the Larder and on the Table. A Gastronomical Approach to the History of Venetian Cephalonia / Στο κελλάρι και στο τραπέζι. Μία γαστρονομική προσέγγιση στην ιστορίας της βενετικής Κεφαλονιάς

Fonti archivistiche di vario genere (registri economici, libri contabili, elenchi di prodotti locali, liste di generi alimentari importati), ma anche diari di viaggiatori e testi letterari costituiscono una fonte preziosa d’informazioni relative alle preferenze culinarie, le abitudini alimentari e la cucina sia nella quotidianità sia in occasioni speciali nei territori veneziani d’Oltremare in generale e nella fattispecie di Cefalonia. Molte pietanze, come si deduce dai loro nomi, erano state introdotte dall’Occidente; alcune vengono tutt’oggi cucinate; altre hanno conservato il loro nome ma è cambiato il modo di preparazione. Sta di fatto che la cucina dei Veneziani durante i primi secoli della loro storia era semplice e senza molte pretese, nonostante l’abbondanza di generi alimentari di base. Le loro usanze culinarie cambiarono in virtù dell’influenza della cucina bizantina e orientale, ricca di olio e spezie, e in seguito, con la combinazione degli elementi stranieri con gli ingredienti locali, crearono una propria tradizione gastronomica che ha influenzato a sua volta la cucina dei suoi domini, cosicché i cuochi dei ricchi, ma anche le casalinghe della classe media cucinavano alla veneziana. Ovviamente, questa influenza non è rintracciabile nell’alimentazione dei poveri e dei contadini. Nel loro mondo non c’era posto per la gastronomia; l’unica cosa di cui si preoccupavano, avendo pochi prodotti a disposizione, era di sfamarsi.

Archival sources of different kind (economic records, ledgers, lists of local products and of imported foodstuffs), as well as travellers’ diaries and literary texts are a precious source of information on everyday and festive food, eating habits and cooking in overseas Venetian territories in general, and in Cephalonia in particular. The names of dishes show us their Western origin; some of them are still being prepared; some have kept the name but the recipe has changed. Be as it is, early Venetian cooking was simple and unpretentious, although there was plenty of basic foodstuff. Cooking habits changed due to the influence of Byzantine and Eastern cuisines, rich in oil and spices: later, combining foreign elements with local ingredients, an original Venetian cooking tradition was born, which in turn influenced the cuisine of its territories, so that not only the chefs of the upper classes but also middle class housewives would follow the Venetian cuisine. This influence is obviously not to be found in the diet of the poorest and of the farmers. Their world had no place for refined cuisine; having only a few foodstuffs at their disposal, the only thing they cared about was feeding themselves.

Ποικίλα αρχειακά τεκμήρια (οικονομικά κατάστιχα, λογαριασμοί, κατάλογοι προϊόντων και εισαγομένων ειδών), αλλά και περιηγητικά ημερολόγια και λογοτεχνικά κείμενα αποτελούν πολύτιμη πηγή πληροφοριών για τις γευστικές προτιμήσεις, τις διατροφικές συνήθειες και τη μαγειρική, τόσο την καθημερινή όσο και τη γιορτινή στις βενετικές κτήσεις γενικά και στην Κεφαλονιά ειδικά. Πολλά από τα τρόφιμα και τα φαγητά όπως μαρτυρούν τα ονόματά τους, είχαν εισαχθεί από τη Δύση. Μερικά μαγειρεύονται ακόμη και σήμερα· άλλα διατήρησαν το όνομά τους, αλλά άλλαξε ο τρόπος παρασκευής τους.Είναι γεγονός ότι η κουζίνα των Βενετών στους πρώτους αιώνες της ιστορίας τους ήταν λιτή και χωρίς αξιώσεις παρά την αφθονία των βασικών ειδών διατροφής. Οι διατροφικές τους συνήθειες άλλαξαν με την επίδραση της βυζαντινής και της ανατολίτικης κουζίνας, πλούσιας σε λάδι και μπαχαρικά, και με τον συνδυασμό των ξένων στοιχείων με τις πρώτες ύλες που είχαν στην διάθεσή τους. Η βενετική κουζίνα επέδρασε με την σειρά της στην κουζίνα των βενετοκρατούμενων περιοχών, με αποτέλεσμα οι μάγειροι των πλουσίων αλλά και οι νοικοκυρές στις αστικές κουζίνες τους να μαγειρεύουν αλλά βενετσιάνα. Όπως είναι λογικό, η επίδραση αυτή δεν διαπιστώνεται στη διατροφή των φτωχών και των αγροτών, όπου δεν υπήρχε θέση για τη γαστρονομία, δεδομένου ότι το μόνο που τους απασχολούσε, με τα λιγοστά προϊόντα που είχαν στη διάθεσή τους, ήταν να χορτάσουν την πείνα τους.

Sebbene vivessero spiritualmente isolate (clausura), sulla base dei contratti di compravendita e affitto si può cogliere quanto fosse vivace la loro attività economica. Il registro di entrate ed uscite conservato, relativo al periodo dal 1771 al 1798, testimonia della loro attenzione per un’alimentazione quanto più varia, basata sulla carne e sul grano, ma integrata anche con uova, formaggio, diversi legumi, verdura nonché frutta fresca e secca. Le spese per l’acquisto di spezie, caffè e cioccolato attestano il loro gusto raffinato e la cura nella preparazione delle pietanze.

The convent of St. Clare was founded in 1301. Although nuns were mainly devoted to praying and contemplating, they also took care of the education of girls (mainly from noble families). Though they left a withdrawn life (they were cloistered nuns), their economical activity was very lively, as we can see through their purchase and rental contracts. The records of incomes and expenses relating to the period between 1771 and 1798 show how they cared about a diet as varied as possible, based on meat and wheat but enriched with eggs, cheese, legumes, vegetables, as well as fresh and dried fruit. The expenses for spices, coffee and chocolate show their refined taste and their care in cooking dishes.

Samostan sv. Klare je bil ustanovljen leta 1301. Redovnice so temeljno skrb posvečale molitvi in kontemplaciji, ukvarjale pa so se tudi z vzgojo (predvsem plemiških deklet). Čeprav so duhovno živele odmaknjeno (klavzura), lahko na osnovi njihovih kupoprodajnih in zakupnih pogodb sklepamo tudi o njihovem živahnem gospodarskem delovanju. Ohranjena blagajniška knjiga za obdobje med letoma 1771 in 1798 pa priča o njihovi skrbi za raznovrstno prehrano v samostanu. Temeljila je na mesu in žitu, a so si jedilnik dopolnjevale tudi z jajci, sirom, raznovrstnimi stročnicami, zelenjavo ter svežim in suhim sadjem. Izdatki za nakup začimb, kave in čokolade kažejo na njihov izboren okus in skrbno pripravo hrane.

“Schienali, morone e caviali” nel commercio veneziano a Tana, secoli XIV-XV / “Schienali, Morone e Caviali” in the Venetian Commerce in Tana, 14th – 15th  Centuries

Questa relazione riguarda una caratteristica merce della Tana: il caviale e i pesci salati. Essi provenivano soprattutto dal Mar Caspio ma anche da allevamenti situati nell’estuario del Don, vicino alla Tana veneziana. Le informazioni che riguardano la commercializzazione di questi prodotti sono rare ma danno abbastanza elementi per conoscere le condizioni sotto le quali il caviale e i pesci salati arrivavano a Tana, i prezzi, i noli, il loro carico sulle navi della Serenissima per poi essere trasportati a Venezia e ad altri luoghi dello Stato da mar come anche nella capitale bizantina.

This report concerns characteristic commodities of Tana: caviar and salted fish. They came mainly from the Caspian Sea but also from farms located in the Don estuary, near Venetian Tana. The information concerning the marketing of these products is rare but give enough elements to know the conditions under which caviar and salted fish arrived in Tana. Moreover, it is useful to analyze the prices and the freights of these products, but even their transportation on the ships of the republic toward Venice and other places in the Stato da Mar as well as in the Byzantine capital.

Η ανακοίνωση αυτή αφορά ένα χαρακτηριστικό είδος εμπορεύματος από την Τάνα: το χαβιάρι και τα παστά ψάρια (morone, schienali). Αυτά προέρχονταν κυρίως από την Κασπία θάλασσα,  αλλά και από ιχθυοτροφεία στην εκβολή του ποταμού Δον κοντά στην βενετική Τάνα. Οι πληροφορίες που αφορούν την εμπορευματοποίηση αυτών των προϊόντων σπανίζουν αλλά δίνουν αρκετά στοιχεία για τις συνθήκες κάτω από τις οποίες το χαβιάρι και τα ψάρια έφθαναν στην Τάνα, τις τιμές, τα ναύλα και τη φόρτωση τους στα καράβια της Γαληνοτάτης για να μεταφερθούν στη συνέχεια στη Βενετία και σε άλλες βενετοκρατούμενες περιοχές του ελληνικού χώρου καιστη βυζαντινή πρωτεύουσα.

Il trasporto del sale e del grano a Venezia nella metà del ‘500 e la marina mercantile dei Greci / Transporting Salt and Wheat in Venice in the Middle 16th Century and the Greek Commercial Shipping

Il sale e il grano, per quanto riguarda le loro modalità di trasporto, si classificano tra i cosiddetti carichi sfusi, cioè tra quelli voluminosi e di valore relativamente basso, che vengono trasportati su vasta scala e costituiscono l’unico o almeno il principale carico di una nave. Il sale, oltre a soddisfare alcuni basilari bisogni alimentari e ad aggiungere sapidità al cibo, era anche importante per la conservazione degli alimenti. Lo stato veneziano basò in gran parte su questo prodotto del mare la sua talassocrazia, soprattutto agli inizi della sua storia, ma anche in seguito, mentre dalla gestione delle scorte di cereali dipendeva sempre la sopravvivenza della popolazione di Venezia e dei suoi possedimenti nel Levante. Per tali ragioni questi due prodotti furono da sempre monopolio di stato.
Questa mia comunicazione illustrerà sia le condizioni di produzione del grano e del sale nello stato veneziano da mar e del loro trasporto, sia anche il rapporto fra questo trasporto e lo sviluppo della navigazione mercantile dei Greci dalla metà del 16° secolo in poi.

As far as their transport is concerned, salt and wheat are classified as shipping bulks, i.e. voluminous loads of low value that are shipped on a massive scale and are the only or the main load of a ship. Salt satisfied some basic food needs and enhanced the flavour of food, but was also important for preserving food. The Venetian State founded most of its thalassocracy on this sea product, mainly in its early history but also later, whereas the survival of the population in Venice and its Levant territories depended on how cereal stocks were managed. That’s why these two products were a State monopoly from the beginning.
My paper will describe both how wheat and salt were produced and transported in Venice Stato da mar, and also the relation between such transport and the development of the Greek commercial shipping from mid-16th century onwards.

Το αλάτι και το σιτάρι ως προς τον τρόπο μεταφοράς τους κατατάσσονται στα λεγόμενα χύδην φορτία, σε όσα δηλ. είναι ογκώδη και σχετικά φθηνά, διακινούνται σε μεγάλη κλίμακα και αποτελούν το μοναδικό ή το κυριότερο φορτίο ενός πλοίου. Το αλάτι, πέρα από την ικανοποίηση βασικών διατροφικών αναγκών και την προσθήκη γεύσης στο φαγητό, ήταν σημαντικό και για τη συντήρηση των τροφίμων. Σε αυτό το προϊόν της θάλασσας το βενετικό κράτος στήριξε σε μεγάλο βαθμό τη θαλασσοκρατορία του, ειδικά στα πρώτα της βήματα, αλλά και αργότερα, ενώ από τη διαχείριση των αποθεμάτων σιτηρών κρινόταν πάντοτε η επιβίωση του πληθυσμού της Βενετίας και των υπερπόντιων κτήσεών της. Για τους παραπάνω λόγους αυτά τα δύο είδη εντάχθηκαν εξαρχής στο κρατικό μονοπώλιο.
Το κείμενο που ακολουθεί θα εστιάσει τόσο στους γενικούς όρους παραγωγής των δύο αυτών προϊόντων στο βενετικό κράτος της θάλασσας και στη διακίνησή τους όσο και στη διασύνδεση αυτής της διακίνησης με την ανάπτυξη της εμπορικής ναυτιλίας των Ελλήνων από τα μέσα του 16ου αιώνα και μετά.

Produzione di cereali e crisi a Cipro: la testimonianza di Zuan Francesco Stella, segretario della cancelleria dell’isola (1566) / Cereal Production and Crisis in Cyprus in the Words of Zuan Francesco Stella, Secretary of the Chancellery of the Island (1566) / Παραγωγή σιτηρών και επισιτιστική και κοινωνική κρίση στην Κύπρο κατά την τελευταία δεκαετία της βενετικής κυριαρχίας: η μαρτυρία του Zuan Francesco Stella, νοταρίου της Γραμματείας του νησιού (1566).

I principali beni di consumo prodotti da Cipro durante la dominazione veneziana, per la loro oggettiva importanza o perché potevano essere esportati all’estero, erano il sale, il vino, lo zucchero, il cotone e i tessuti locali, i cereali (soprattutto il grano e l’orzo). L’isola arrivò ad essere uno dei principali granai della Repubblica.
In particolare, i veneziani attuarono sistematicamente un programma di ampio respiro che mirava a mantenere ad alti livelli la coltivazione dei cereali, a scapito di altri prodotti, come il cotone che, esportati, potevano fruttare ai produttori maggiori guadagni. Proibivano, inoltre, l’esportazione di qualsiasi quantità di cereali se non ufficialmente autorizzata dal Reggimento, che nel caso di eccedenze, ne consentiva l’esportazione soltanto verso la metropoli e a prezzi bassi, in modo che la Serenissima non fosse costretta a rifornirsene altrove. Sancirono, infine, l’annuale raccolta di scorte (tansa) che dovevano assicurare l’autonomia alimentare della popolazione cipriota per 18 mesi. Nonostante queste misure e la scomparsa di gravi problemi del passato (siccità, cavallette ecc.), che danneggiavano gravemente la produzione di cereali, nell’ultimo decennio della dominazione veneziana l’isola conobbe fenomeni di carestia e i ceti più bassi delle campagne e delle città si trovarono in estrema indigenza.
La comunicazione, basata sulla Relazione di Zuan Francesco Stella, segretario della Cancelleria «in materia de proveditori de Cypro» (1566), si propone di mettere in luce alcune significative disfunzioni nelle politiche della Serenissima e nel sistema di produzione di cereali adottato a Cipro, che non consentirono di affrontare fenomeni di sfruttamento dei servi della gleba (parici) e dei liberi agricoltori (francomati) da parte dei potenti feudatari e degli affittuari dei terreni pubblici, e di evitare una crisi alimentare nelle città e soprattutto a Nicosia.

The main commodities produced in Cyprus during the Venetian rule, due to their importance in the internal market or because they could be exported, were salt, wine, sugar, cotton and local woven fabric, cereals (mainly wheat and barley). The island gradually became one of the main granaries of the Republic.
In particular, Venetians systematically carried out a wide programme aiming at keeping cereal cultivation at top levels at the expense of other products as cotton, which, once exported, could bring more money in the producers’ pockets.
Venetians also forbade the export of any amount of cereals unless officially authorized by the Regiment. In case of surpluses, the Regiment only allowed cereals to be exported to Venice, at low prices, so that the Serenissima was not forced to find it elsewhere. Venetians also established the yearly amount of stocks (tansa) that should be gathered in order to guarantee the food self˗sufficiency of the Cyprus population for 18 months. Despite such measures, and even if the severe problems of the past had disappeared (e.g. drought and locusts, which had severely damaged the production of cereals), in the last decade of the Venetian rule the island experienced food shortage, and the lower classes living both in the country and in towns found themselves in great need.
This paper, based on the Report of Zuan Francesco Stella, secretary of the Chancellery «in materia de proveditori de Cypro» (1566), aims at showing some of the main malfunctions in the policies of the Serenissima and in the production of cereals in Cyprus, which did not allow the system to face the exploitation of serfs (parici) and free farmers (francomati) by powerful landowners and landholders of public lands, in order to avoid food shortages in towns, particularly in Nicosia.

Τα σημαντικότερα προϊόντα που παρήγε η βενετική Κύπρος, είτε για τη σημασία τους στην εγχώρια κατανάλωση είτε επειδή είχαν τη δυνατότητα να εξαχθούν στο εξωτερικό, ήταν το αλάτι, το κρασί, η ζάχαρη, το βαμβάκι και τα προϊόντα της τοπικής υφαντουργίας, και ασφαλώς τα σιτηρά (ιδίως το σιτάρι και το κριθάρι). Όσον αφορά τα τελευταία, ας σημειωθεί ότι το νησί αναδείχτηκε σε έναν από τους σημαντικότερους σιτοβολώνες της Γαληνοτάτης.
Ειδικότερα, οι βενετοί κυρίαρχοι εφήρμοσαν μεθοδικά ένα μεγαλόπνοο πρόγραμμα που στόχευε στη διατήρηση της καλλιέργειας των σιτηρών σε υψηλά επίπεδα και μάλιστα σε βάρος άλλων καλλιεργειών, όπως το βαμβάκι, οι οποίες είχαν τη δυνατότητα με την εξαγωγή τους να αποφέρουν μεγαλύτερα κέρδη στους παραγωγούς. Επίσης, απαγόρευαν την εξαγωγή οιασδήποτε ποσότητας σιτηρών δίχως προηγούμενη ρητή άδεια της διοίκησης, η οποία όταν υπήρχαν περισσεύματα σιτηρών επέτρεπε να εξαχθούν μόνον στη μητρόπολη και μάλιστα σε χαμηλές τιμές, ώστε να μην υποχρεώνεται το κράτος να τα προμηθεύεται από αλλού (όπως λ.χ. από την Απουλία ή από οθωμανικές περιοχές όπως η Βόνιτσα, το Ξηρόμερο ή ο Βόλος). Τέλος, καθιέρωσαν την ετήσια συγκέντρωση αποθεμάτων (tansa), τα οποία έπρεπε να εξασφαλίζουν τη διατροφική επάρκεια του κυπριακού πληθυσμού για διάστημα 18 μηνών. Παρά τα μέτρα αυτά αλλά και την εξάλειψη οξέων προβλημάτων του παρελθόντος (ανομβρία, επιδημίες της ακρίδας κλπ.) που έπλητταν σοβαρά την παραγωγή των σιτηρών, κατά την τελευταία δεκαετία της βενετικής κυριαρχίας το νησί γνώρισε φαινόμενα σιτοδείας και τα κατώτερα κοινωνικά στρώματα τόσο της υπαίθρου όσο και των πόλεων βρέθηκαν σε κατάσταση έσχατης ένδειας.
Βασιζόμενη στην έκθεση του Zuan Francesco Stella, νοταρίου της Γραμματείας της Κύπρου με αρμοδιότητα σε θέματα γενικών προβλεπτών (1566), η ανακοίνωση έχει ως στόχο να αναδείξει ορισμένες κρίσιμης σημασίας δυσλειτουργίες των πολιτικών της Βενετίας και του συστήματος παραγωγής των σιτηρών στην Κύπρο, που δεν επέτρεψαν την αντιμετώπιση φαινομένων εκμετάλλευσης των παροίκων και των ελεύθερων χωρικών από μέρους των ισχυρών φεουδαρχών και ενοικιαστών των δημόσιων γαιών και την αποφυγή της παραπάνω επισιτιστικής κρίσης στις πόλεις και δη στη Λευκωσία.

Vendita e consumo di prodotti commestibili a Corfù nel XVIII secolo / Selling and Consuming Edible Products in Corfu in the 18th Century / Εμπόριο και κατανάλωση εδωδίμων στη βενετοκρατούμενη Κέρκυρα του 18ου αιώνα

La relazione si basa su materiale archivistico che contiene inventari degli alimenti in vendita nei negozi di Corfù nel XVIII secolo, catastici economici dei monasteri in cui vengono registrate le spese quotidiane, atti della comunità, ma anche semplici lettere scritte da monaci e laici. Grazie a queste fonti siamo stati in grado di compilare un ampio elenco di vari tipi di alimenti, con l’indicazione del paese d’origine e del relativo prezzo. È stato anche possibile descrivere la dieta che seguivano i monaci in ottemperanza del calendario canonico, le preferenze alimentari dei nobili, ma anche la parca dieta dei semplici lavoratori. Sono emerse anche notizie interessanti su alcuni alimenti indicati per la cura dei malati. La dieta dei sudditi veneziani di Corfù, come pure quella dei governatori dell’isola, dipendeva in parte dalla produzione locale, ma principalmente dall’importazione di beni alimentari da paesi vicini e lontani. I prodotti alimentari costituivano un ampio campionario che andava da alimenti di base, come gli “umili” legumi, fino a prodotti alimentari estremamente ricercati, come il caviale importato da Costantinopoli e le beccacce conservate sott’olio. Il confronto tra i nominativi e i prezzi degli alimenti indicati nelle fonti archivistiche con i listini dei prezzi (tariffe) stabiliti dalle autorità locali venete fornisce un’importante testimonianza dei trasporti dei prodotti alimentari nel corso del XVIII secolo, della perseveranza dei consumatori nell’importare alimenti specifici, dell’inclusione di nuove specie e delle fluttuazioni dei prezzi.

The report is based on archival material, that contains inventories of the foods sold in Corfu shops in the 18th century, like economic land registers of the monasteries, where daily expenses are recorded, community deeds, but also simple letters written by monks and lay people. Thanks to these sources, it was possible to compile an extensive list of various types of food, with the indication of the origin countries and their prices. It was also possible to describe the diet that the monks followed in compliance with the canonical calendar, the food preferences of nobles, but also the simple diet of simple workers. Interesting news emerged also on some foods indicated for the treatment of the sick. The diet of the Venetian subjects in Corfu, as well as that of the governors of the island, depended in part on local production, but mainly on the import of food from neighboring and distant countries. Food products constituted a large sample that ranged from basic foods, such as legumes, to extremely expensive ones, such as caviar imported from Constantinople and woodcocks preserved in oil. The comparison between the names and the prices of the food indicated in the archival sources with the price lists (tariffs) established by the local Venetian authorities provides an important testimony of the transport of food products during the 18th century, of  consumers perseverance to import specific food, but even a witness of inclusion of new types of products and the possibility to reconstruct price fluctuations.

Η ανακοίνωση στηρίζεται σε ανέκδοτο αρχειακό υλικό και σε δημοσιευμένους τιμοκαταλόγους τροφίμων. Στο αρχειακό υλικό περιλαμβάνονται ινβεντάρια  των καταστημάτων που πουλούσαν τρόφιμα στην Κέρκυρα του 18ου αιώνα, μοναστηριακά κατάστιχα εξόδων, πρακτικά της τοπικής κοινότητας, καθώς και επιστολές μοναχών και λαϊκών. Χάρη στις ανωτέρω πηγές μπορέσαμε να καταρτίσουμε έναν μεγάλο κατάλογο με διάφορα είδη τροφίμων, με τη δήλωση της προέλευσής τους και τις αντίστοιχες τιμές. Επίσης έγινε δυνατή η αποτύπωση της δίαιτας που ακολουθούσαν οι μοναχοί στοιχιζόμενοι με το εκκλησιαστικό ημερολόγιο, των προτιμήσεων των ευγενών αλλά και της λιτής διατροφής των εργατών. Επίσης προέκυψαν ενδιαφέρουσες ειδήσεις για ορισμένα τρόφιμα που προτείνονταν για τους αρρώστους και συνέτειναν στη θεραπεία μαζί με τα φάρμακα. Η διατροφή των βενετών υπηκόων του νησιού αλλά και των βενετών διοικητών που υπηρετούσαν εκεί εξαρτώνταν από την  τοπική παραγωγή αλλά κυρίως από την εισαγωγή πολλών τροφίμων από πλησιόχωρους ή μακρινούς τόπους. Τα είδη διατροφής κάλυπταν μία εκτεταμένη λίστα στην οποία περιλαμβάνονταν από ταπεινά όσπρια έως εξεζητημένα είδη, όπως χαβιάρι Κωνσταντινούπολης και μπεκάτσες στο λάδι. Η αντιβολή των ονομάτων και των τιμών των τροφίμων, που απαντούν στις αρχειακές πηγές,  με τους δημοσιευμένους καταλόγους των τοπικών βενετικών αρχών, έδειξε  τη διακίνηση των προϊόντων στη διάρκεια του 18ου αιώνα, την προσήλωση στην εισαγωγή συγκεκριμένων ειδών, τη συμπερίληψη νέων, τις διακυμάνσεις των τιμών.

Economia e sussistenza in Dalmazia e Albania venete in alcune fonti dell’Archivio di Stato di Venezia (secoli XVI-XVIII) / Economy and Subsistence in Venetian Dalmatia and Albania in Documents of the Venice State Archives (16th–18th centuries)

I territori veneti di Dalmazia e Albania, fondamentali per il controllo dei traffici marittimi e commerciali nel basso Adriatico e nel Mediterraneo orientale, erano governati da Venezia attraverso una capillare presenza di “rettori”, con a capo il Provveditore generale in Dalmazia e Albania, con sede a Zara e con poteri di generale organizzazione e coordinamento. Dalle relazioni finali di questi rettori, presentate in Collegio al ritorno in patria, emergono, tra le altre informazioni, anche dettagliate notizie sulla situazione economica dei territori governati, nonché sulle attività praticate e attuate dalle popolazioni locali  per la sussistenza alimentare e il vettovagliamento. Nel XVIII secolo un ulteriore impulso al miglioramento delle tecniche agricole fu dato dalle Accademie Agrarie – di Spalato, Traù e Zara – ma non sempre con concreti risultati.

Venetian territories of Dalmatia and Albania were fundamental to control maritime and commercial activities in lower Adriatic and Eastern Mediterranean, and were ruled by Venice through a widespread presence of “rettori”, headed by the Provveditore Generale in Dalmazia e Albania, who resided in Zara, and was in charge of the general organization and coordination. On their return to the homeland, the rettori presented their final reports to the Collegio: such reports, among other information, give detailed news on the economic situation of those territories, as well as on the activities of the local population to produce and gather food. During the 18th century the Agricultural Academies (in Spalato, Traù and Zara) gave a further contribution to the improving of agricultural techniques – with ambiguous results.

Foodways in Flux: Coffee and Chocolate in the Early Modern Stato da mar / Usi e costumi alimentari che cambiano: caffè e cioccolato nello Stato da mar della prima età moderna

The early modern era was a time of tremendous dynamism in the global history of food. New World foods such as maize, potatoes, peppers, tomatoes, and chocolate were introduced into the Mediterranean, and all eventually left their mark. Similarly, the centuries old flow of commodities from east to west continued to impact Mediterranean foodways, most notably in the rapid spread of coffee beginning in the second half of the sixteenth century.  In this paper I will survey the spread of chocolate and coffee across the early modern Mediterranean, with particular attention to the Venetian stato da mar. The circulation of these commodities provides a useful case study to illustrate the mechanisms and the dynamism of the spread of new commodities, from both the Old World and the New, and their gradual social and economic impact.

La prima età moderna è stata un periodo di enorme dinamismo nella storia mondiale del cibo. Il Mediterraneo vide l’arrivo di alimenti dal Nuovo Mondo che avrebbero lasciato il segno: mais, patate, peperoni, pomodori, cioccolato. Analogamente, gli alimenti che da secoli viaggiavano da Oriente a Occidente continuarono a influenzare le abitudini alimentari mediterranee, come possiamo osservare nella rapida diffusione del caffè a partire dalla seconda metà del XVI secolo. In questa relazione analizzerò la diffusione del cioccolato e del caffè nell’area del Mediterraneo nella prima età moderna, con particolare attenzione allo Stato da mar veneziano. La circolazione di questi alimenti fornisce un caso studio utile ad illustrare i meccanismi e il dinamismo della diffusione di nuovi alimenti provenienti sia dal Vecchio che dal Nuovo Mondo, nonché il loro graduale impatto socio-economico.

Malvasia: transfer e percezioni. Il “Commonwealth” veneziano come snodo per il commercio internazionale del vino / Malvasia: Transfer e Perceptions. The Venetian “Commonwealth” as a Hub for Wine International Trade

Finora il ruolo di Venezia come snodo fondamentale del commercio europeo dei vini non è stato tracciato che a grandi linee. Dal XIII secolo in poi il commercio sulla piazza di Venezia dei vini meridionali ad alta gradazione provenienti dall’area mediterranea e la loro esportazione ad opera dei mercanti veneziani sono attestati con frequenza crescente e rappresentano una costante nei secoli. L’ingresso di questi vini, conosciuti per lo più con i nomi collettivi di Malvasia, Romania e Rainfal, nelle regioni a nord delle Alpi e dei Pirenei introdusse un’importante differenziazione nell’offerta. Si trattava di vini considerati pregiati e adatti ad occasioni festive e celebrative, che fungevano da status symbol e da strumenti di distinzione sociale. Nel corso della presentazione saranno illustrati inizialmente i presupposti e le condizioni del mercato del vino europeo in età premoderna. Dopo un accenno ai tipi di vino negoziati intorno al 1300 a Venezia sarà delineato con alcuni esempi il ruolo dei vini del sud nei territori d’oltralpe. Nell’ultima parte della relazione sarà trattato il motivo della Malvasia, che nella letteratura ha un ruolo notevole nella novellistica italiana fino al romanzo familiare Buddenbrook di Thomas Mann, con alcuni esempi della letteratura e dell’arte.

For long time, the role of Venice as a fundamental hub of the European wine trade has been traced only in outline. From the 13th century the trade on the square of Venice of Southern and high-grade wines from the Mediterranean area and their export, made by Venetian merchants, are attested with increasing and constant frequency over the centuries. The penetration of these wines, mostly known by the collective names of Malvasia, Romania and Rainfal, in the North regions of the Alps and over the Pyrenees introduces an important differentiation in the offer. These wines were considered precious and suitable for festive and celebratory occasions, which served as status symbols and instruments of social distinction. During the presentation, the assumptions and conditions of the European wine market in the pre-modern age will be initially illustrated. After a mention of the types of wine negotiated around 1300 in Venice, the role of Southern wines in the territories over the Alps will be outlined with some examples. The last part of the report will be covered by the Malvasia motif, which has a significant role in Italian novelist and European literature up to Thomas Mann’s family novel Buddenbrook.

Als Drehscheibe des europäischen Weinhandels wurde Venedig bisher nur ansatzweise untersucht. Seit dem 13. Jahrhundert ist der Handel mit schweren alkoholreichen Südweinen aus dem Mittelmeerraum in der Lagunenstadt sowie der Transfer durch venezianische Kaufleute immer dichter belegt und stellt für Jahrhunderte eine Konstante dar. In den Regionen nördlich von Alpen und Pyrenäen sorgen diese Weine, die hauptsächlich unter den Sammelbezeichnungen Malvasier, Romania und Rainfal firmieren, für eine wichtige Differenzierung des Weinangebotes. Sie fungieren überwiegend als Festgetränk bzw. Ehrenweine und dienen als Mittel der Repräsentation und der sozialen Distinktion.
Im Vortrag werden zunächst wichtige Voraussetzungen und Bedingungen des vormodernen europäischen Weinhandels erläutert. Nach einer Skizze der in Venedig um 1300 gehandelten Weinsorten wird die Rolle von Südweinen in nordalpinen Landschaften schlaglichtartig an ausgewählten Beispielen beleuchtet. Im letzten Teil des Vortrags wird das Motiv des Malvasiers, das in der Literatur von der italienischen Novellistik bis zum Familien- und Gesellschaftsroman der Buddenbrooks von Thomas Mann eine beachtliche Rolle spielt, an einigen Beispielen aus Literatur und Kunst angesprochen.

L’industria del maraschino di Zara era parte della realtà economica del mondo adriatico veneziano caratterizzato ancora nel XVIII secolo da intensi traffici mercantili. La prosperità del settore era strettamente legata alla rigorosa neutralità della Serenissima, alla crescita dei commerci veneziani, alla pace che regnava in Adriatico. Una fitta rete di rapporti univa la città dalmata all’Europa occidentale, alla Mitteleuropa, alla Russia e, attraverso l’Inghilterra, al Nuovo Mondo favorendo la diffusione del pregiato estratto da un frutto locale, le marasche.

The Zara maraschino industry was part of the economic reality of the Venetian Adriatic world, still characterized by intense mercantile traffic in the eighteenth century. The prosperity of the sector was closely linked to the strict neutrality of the Serenissima, to the growth of Venetian commerce, to the peace that reigned in the Adriatic. A dense network of relations united the Dalmatian city with Western Europe, Central Europe, Russia and, through England, the New World, favoring the spread of the prized extract from a local fruit, the maraschino cherries.
